The craft Distillery is producing a delicious range of hand made Spirits, Liqueurs and Fusions using traditional methods and local ingredients.
ABOUT THE DISTILLERY
Edinburgh Preserves has been playing with fruit, herbs and spices for 25 years and it seemed a natural progression and complimentary to their current range, to set up a micro-distillery.
So in 2018 Edinburgh Distillers was established at our base in East Lothian and we have created some delicious Spirits and Liqueurs.
The Red Admiral Gin is made from start to finish by hand, bottled and labelled in East Lothian by Bob, our Head Distiller, and the rest of the team.
The Liqueurs are made in the traditional way by soaking them in the Alcohol for several weeks. The Sloes are soaked in our very own Red Admiral Gin and the Brambles in Whisky.
We also work with a network of Social Enterprises around the country to help put together the final part of the packaging process and to send to our customers.
Butterflies are a symbol of conservation and our hand drawn images on the labels are as a tribute to the Naturalist John Muir who was from East Lothian. He was the father of National Parks in America and an early founder of the conservation movement.
Soon we will be adding a little sachet of Wildflower Seeds onto our bottles so we can plant these at home to encourage the activity of Butterflies, Bees and other pollinators.

THE RED ADMIRAL GIN ‘the good natured Gin’ 43% ABV
The Red Admiral Gin is a modern yet classic London Dry Gin made 100% by us in small batches in the farmlands on the edge of Edinburgh.
With Juniper and Citrus notes it has a balanced complex flavour that is great with tonic, on its own or in a classic cocktail.
Making something special is often about keeping things simple, taking your time and using the best ingredients. With just 9 botanicals we are using the best sourced ingredients such as Macedonian Junipers for their classic Dry Gin character, Ground-Ivy (of the mint family) for their herbal notes, and Coriander Seeds for their citrus and Spice flavours.
During the distillation process we separate the different tastes into Heads, Hearts and Tails. The Hearts are the very best of the run which we use to make the Gin (and we discard the Heads and Tails), which results in a very smooth, citrusy, luxurious taste.

SLOE GIN 26% ABV
This very traditional British Drink is delicious either as a winter warmer or as a refreshing summer drink mixed with sparkling wine.
The Sloe Gin is hand-made by Bob and Sandy in the same way as you would at home to get the best flavours. The Sloes are picked, steeped for several weeks in a small amount of sugar and our very own Red Admiral Gin. This helps draw out all those delicious juices and fruity flavours to create the perfectly balanced combination. Not too sweet and not too tart, with plummy aromas, hints of almond from the Sloe stones, and fruity notes from the Sloes. Of course it is also important to taste the delicious hand-made Red Admiral Gin.
We are only selling the Sloe Gin on our website as this is a handmade product and limited in supply.
Serve: Straight up at room temperature, On the rocks, with a Cocktail
BRAMBLE WHISKY LIQUEUR 20% ABV
Like the Sloe Gin, this is hand-made by Bob & Sandy in East Lothian.
One of the finest of all infusions, our Bramble Liqueurs simple ingredients mellow over time into a wonderfully rich and fruity taste. The Blackberries and the Whisky are a perfect combination, it is full bodied with an almost Port like flavour.
The juicy Brambles are soaked with a wee dram of Whisky and some sugar to create a wonderfully rich and fruity tasting liqueur in perfect harmony.
The Brambles and the Whisky are both from the Angus area of Scotland.
We are only selling the Bramble Liqueur on our website as this is a handmade product and limited in supply.
Serve: Straight up at room temperature, On the rocks, with a Cocktail
It is delicious after supper drank neat, with cheese or as a winter warmer. Also try with ice and soda.

Simple Serves:
RED ADMIRAL GIN (with premium tonic or alternative):
Spring/Fresh – Orange or Lemon wheel & Mint (alt – Mediterranean tonic)
Summer/Vibrant – Strawberries & Black Pepper, or Strawberries & Basil (alt – Cucumber
tonic)
Autumn/Crisp – Pear & Cinnamon (alt – Ginger ale)
Winter/Warming – Orange peel & Star Anise (alt – Sparkling Rhubarb)
Cocktails:
White Lady
35ml Red Admiral Gin
15ml Cointreau
25ml fresh lemon juice
15ml sugar syrup
Method: Shake all ingredients with ice and double strain into a chilled martini or coupe
glass. Garnish with an orange peel.
Watermelon Southside
50ml Red Admiral Gin
4 chunks fresh watermelon
8 mint leaves
25ml fresh lime juice
15ml sugar syrup
Method: Muddle the watermelon in a cocktail shaker then add all other ingredients. Shake
with ice and double strain into a chilled martini or coupe glass. Garnish with a mint sprig.
Peach Melba
50ml Red Admiral Gin
50ml peach iced tea
spoonful Edinburgh Preserves Raspberry Jam*
15ml lemon juice
Method: Shake vigorously without ice to ensure preserve is combined, then shake with ice
to chill. Double strain into a highball glass filled with ice, and garnish with a lemon slice
and raspberry.
Tea Time
50ml Red Admiral Gin
25ml Cloudy Apple juice
25ml Chamomile tea
25ml lemon juice
15ml honey syrup*
Shake all ingredients with ice and strain into a highball glass filled with ice. Garnish with
an apple fan.
*honey syrup – combine two parts honey to one part water, heat gently and stir to dissolve.
Espresso Martini
35ml Red Admiral Gin
15ml Cointreau
50ml espresso (or cold brew coffee)
10ml sugar syrup
Method: Shake all ingredients with ice and double strain into a chilled martini or coupe
glass. Garnish with three coffee beans.
Classic Martini
60ml Red Admiral Gin
15ml Dry Vermouth
Method: Stir ingredients with ice until chilled, and strain into a chilled martini or coupe
glass. Garnish with a lemon peel.
Negroni
25ml Red Admiral Gin
25ml Campari
25ml Sweet Vermouth
Method: Stir ingredients with ice until chilled, and strain into a chilled martini or coupe
glass. Garnish with an orange slice.
Breakfast Martini
35ml Red Admiral Gin
15ml Cointreau
25ml Earl Grey Tea
15ml Lime juice
Spoonful of Edinburgh Preserves Orange Marmalade
Method: Shake vigorously without ice to ensure preserve is combined, then shake with ice
to chill. Double strain into chilled martini or coupe glass and garnish with lime wheel.
Rose By Any Other Name
50ml Red Admiral Gin
25ml Lychee juice
25ml Lemon juice
15ml Strawberry syrup*
Method: Shake all ingredients with ice and double strain into a chilled martini or coupe
glass. Garnish with lemon peel and strawberry slice.
*Strawberry syrup – Add 250g sugar to 250ml boiling water and stir until dissolved. Add to
blender with a punnet of strawberries and blend until smooth.
